Fix markdown math

@plaa The syntax for latex equations in "gitlab flavored markdown" has changed in version 15.4 of gitlab (released in Sep 2022). The new syntax can be found here: https://docs.gitlab.com/ee/user/markdown.html#math I have changed to the new syntax in the various READMEs.
